Presidents day baked Chicken

Presidents' Day I had the liberty of having the day off and usually I try to do something like going out watching a movie, fishing or cooking for my son.  Cooking was what we decided on.  The day before we did some light grocery shopping and usually I like browsing first the fruits and veggies section and make my way towards the meat and poultry side. Wow It never fails that our eyes go wandering and suddenly we want everything.. My son wanted me to barbecue on this day so we settled for chicken - so chicken it was.  My initial idea was to BBQ but instead I wanted to just set it and forget it kind of thing.  I did not want to watch and turn the chicken as it was grilling..so I decided instead to bake it.  I know I was feeling lazy today. I call this "Presidents day baked chicken".. And instead of the traditional oven I used the gas grill.  Let me tell ya it turned out pretty good ..real juicy.  My son liked it too or maybe he did not want to hurt my feelings.. :) He went up for seconds so it reassured me it was pretty good... My Son the Baseball player...

Baseball is one of the many activities my son enjoys doing.  He has been playing since he was six years old and is now ten.  One of the key things we try to instill or direct in our children is to do positive things in their lives and if they enjoy doing it..even more golden.  They will excel more in the things they like the most and enjoy.  He plays short stop and sometimes second base.  Well here is a couple pictures of his life in baseball and my adventure and joys as i watch him grow..  |The island life...

July Fourth 2011

July Fourth in the island of Guam is celebrated a day earlier than the rest of the world because of our time zone.  It is a time of spending it with family and friends.  The smell of barbecue lingers in the air, the laughter amongst family, and just having a good time.  This year's July 4 was especially cherished - my family and I had time spent together and catch up on talk about relatives in the Philippines.  Questions arised on who is this and what their names are.  What a special time.  It was a first time in a long time we took a group picture together.  The island Life.......
